Gladys Roy's Blueberry Cheesecake

Ingredients

  • Crust:
  • 2 C Graham Wafer Crumbs
  • 1/2 C Melted Butter
  • 4 Tbsp
  • Filling:
  • 8 oz Cream Cheese
  • 3/4 C Sugar
  • 1/4 Tsp Salt
  • 2 Tsp Lemon Juice
  • 2 Tsp Vanilla
  • 1 L Cool Whip
  • 3 C Blueberries (fresh if possible)
  • Blueberry Sauce:
  • 1/2 C Sugar
  • 1 - 1 1/2 Tbsp Cornstarch
  • 1/2 C Water
  • Bunch of Blueberries

Preparation

Step 1

Crust: Place crust into 9x13 pan. Bake at 250 for 2-3 minutes.

Filling: Combine cream cheese, sugar, and salt. Blend well. Add lemon juice and vanilla. Fold in Cool Whip, then blueberries. Chill.

Blueberry Sauce: Stir until thickened. (may have to adjust cornstarch/water)
