Roquefort Pear Salad

Ingredients

  • 1 head leaf lettuce, torn into bite sized pieces
  • 3 pears peeled, cored and chopped
  • 6 oz blue cheese, crumbled
  • 1 avocado, pitted and sliced
  • 1/2 cup peacans
  • Dressing
  • 1/3 cup oil
  • 3 Tbl red wine vinegar
  • 1 1/2 tsp white sugar
  • 1 clove garlic, chopped
  • 1/2 tsp salt
  • pepper to taste

Preparation

Step 1

In skillet over medium heat, stir 1/4 cup sugar together with the pecans. Continue stiring until sugar has melted and caramelized the pecans. Carefully transfer nuts onto waxed paper. Allow to cool, break into pieces.

Dressing
Blend oil, vinegar, 1 1/2tsp sugar, mustard, garlic, salt and pepper.

Layer lettuce, pears, blue cheese, avaocado. Pour dressing over salad, sprinkle with pecans, serve.
