Pumpkin Bread

Ingredients

  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 cup canned pumpkin (try to get organic)
  • 1/2 cup veg. oil
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/4 cup water
  • 1/4 tsp ground ginger
  • 1 cup raisins (optional)
  • 1 cup walnuts or pecans (optional)

Preparation

Step 1

Preheat oven to 350. Grease 9x5 inch loaf pan or 3 mini loaf pans.

In a large bowl, combine sugars, pumpkin, oil, and eggs. Beat until well blended.

In a separate large bowl, combine flour, soda, salt and spices. Add pumpkin mixture and mix well. Stir in water, raisins, and nuts and blend together.

Turn into prepared pan(s). Bake at 350 for 1 hour, 15 minutes (or about 45 minutes for small pans) until done. Cool on rack.
