Tomato Basil Chicken noodle Soup

Ingredients
- 6 oz. thick egg noodles like Kluski
- 1 lb chicken breast cut into bite-sized pieces
- 1 medium onion
- 2 T olive oil
- 1 clove garlic minced
- 1/2 t salt
- 1/2 t black pepper
- 1 can DelMonte Diced Tomatoes with basil, garlic and oregano
- 1 can 14 oz. chicken broth
- 1/4 cup chopped fresh basil
- 1/2 cup grated Parmesan cheese
Preparation
Step 1
Cook noodles and set aside.
In soup pot, saute chicken and onions in oil until chicken is done. Add garlic, salt and pepper. Saute for 1 minute more. Add tomatoes and chicken broth. Heat until the mixture boils, then add the noodles and basil. Heat for 1 minute and serve immediately. Top each serving with Parmesan cheese.
