Ingredients
- 3 yams, peeled and sliced
- 1 small butternut squash, peeled and sliced
- 1 bunch of fresh asparagas, chopped
- 1 medium yellow onion, sliced
- 26 oz coconut milk (or regular milk)
- 2 T. Kuzu root (or cornstarch)
- 2 t. garlic powder
- 2 t. pumpkin pie spice
- 2 t. pepper
- 1 t. salt
- 4 sprigs of fresh rosemary, removed from stems and chopped
- Fresh parsley, chopped
Preparation
Step 1
Mix yams, squash, asparagas, and onions and place in a large glass baking dish. Mix all other ingredients and pour over the top of the squash mixture. Place foil over the top of the pan.
Bake at 375 F for 60-90 minutes or until squash and yams are tender.
Top with fresh parsely and serve.
