Potato and Dumpling Soup

  • potatoes
  • 2 eggs, beaten
  • flour
  • velveeta cheese

Preparation

Step 1

Peel some potatoes and cook in water as if you were making mashed potatoes. Before they are completely done, add dumplings and boil until dumplings are done. Dumplings: 2 eggs, beaten; add a little salt; then add enough flour to make a stiff dough. Spoon dumplings into boiling water. When dumplings and potatoes are cooked, drain half of the water off. Add milk and half of a pkg. of Velveeta cheese. Cook until cheese is melted and serve with crackers.
