Ingredients

  • CAKE:
  • 2 large eggs, beaten until frothy
  • 1 1/4 cups almond flour
  • 1/3 cup sugar substitute
  • 1 teaspoon baking powder
  • BAKED LEMON GLAZE:
  • 3 large eggs, beaten until frothy
  • 1 cup sugar substitute
  • 1 teaspoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon baking powder

Preparation

Step 1

Preheat oven to 350° F, and spray an 8x8-inch baking dish with nonstick cooking spray.

In a large bowl, combine all cake ingredients, and mix well. Pour into prepared pan and bake on the center rack for 15 minutes (or until lightly browned).

While the cake bakes, prepare the Lemon Glaze by whisking all ingredients together in a bowl.

Remove browned cake from oven and let rest for 5 minutes. Pour the glaze over it while still hot, and bake for an additional 20 minutes or until firm. Refrigerate for at least 2 hours to serve chilled, cut into 12 bars.
