Black Bean and Corn Salad

Ingredients

  • 1/4 c olive oil
  • 1 tbsp red wine vinegar
  • zest and juice of 1 lime
  • 2 tsp honey
  • 1 1/2 tsp cumin
  • 540 ml tin black beans drained and rinsed
  • 2 c frozen corn thawed
  • 1 jalapeno seeded and diced
  • or
  • 1 tbsp chopped pickled jalapeno
  • 1/2 c chopped cilantro

Whisk oil, vinegar and seasonings. Stir in beans, corn and peppers. Add cilantro
