Tomato Bisque

Ingredients

  • 1/2 c finely minced onion
  • 3 cloves garlic minced
  • 3 T olive oil
  • 2 Cans pureed tomatoes
  • 3 T dried basil
  • salt and pepper
  • 1/2 c tomato paste
  • 1 c heated heavy cream

Preparation

Step 1

Saute onions and garlic in olive oil until soft.Add basil and cook 1 minute. Add this to saucepan with tomatoes,salt and pepper, and tomato paste. Simmer at least 30 minutes. Before serving stir in cream and simmer 5 minutes.top with parsley
