Bleu Cheese Pasta

Ingredients

  • 1 tablespoon blue cheese (1/2 triangle of Saga Blue)
  • 1 1/2 teaspoon butter
  • 1 pint heavy cream
  • 1/4 cup parmesan
  • 2 slices bacon, cooked and crumbled.
  • 1/4 cup corn, shaved off of cob
  • pistachio nuts (optional)
  • 1 pound linguini or Fettuccine, cooked

Preparation

Step 1

In sauce pan melt butter and bleu cheese, but do not clarify. When smooth add heavy cream. Bring to a boil and then reduce by one quarter. Add in parmesan and cook to consistency. Add bacon, corn and pistachio nuts. Add milk and cook for 3-4 minutes until thick.
Pour over pasta and toss.
