Pork Cutlets with Sage Cream

Ingredients

  • 1 pound prk cutlets 1/4 " thick
  • 1 egg
  • salt
  • flour
  • butter
  • 1 cup half&half
  • 1 tsp dried sage

Preparation

Step 1

1.Pound cutlets to 1/8" thickness, cut each cutlet in half
2.In bowl, beat egg with 1 tablespoon water
3.On waxed paper, mix 1/2 cup flour with 1/2 tsp salt- dip cutlets in egg then flour
4.In a 12 inch skillet over medium high heat in 2 tablespoons of butter, cook cutlets pieces a few at a time until browned on both sides about 3-4 minutes, removing pieces to platter as they brown, add more butter if needed
5. In drippings, stir in 1 1/2 tsp of flour, add half and half and 1/4 tsp of salt, continue stirring and heat to boiling.
6. Pour sauce over cutlets

Serve with mashed potatoes or buttered noodles
