Carrot Soup

Ingredients

  • 1 lb baby carrots
  • 3 cups chicken broth
  • 1/2 tsp salt
  • 1/4 tsp ground ginger
  • 1/4 cup sour cream

Preparation

Step 1

1. Place carrots and 1 T water in microwave safe pie plate. Cover with plastic wrap and vent one corner.

2. Microwave at 100% power for 10 minutes.

3. Transfer carrots to food processor and add broth, salt and ginger. Blend until smooth.

4. Ladle soup into bowls. Place dollop of sour cream on each.
