Ingredients
- 3 lb. pork loin roast
- 4 T olive oil
- 1 medium onion, diced
- 2 cloves garlic, chopped
- 2 c apple juice
- 1/4 c honey
- 1 T dry oregano
- 1 t dry rubbed sage
- 2 T Dijon mustard
- 1 t lemon juice
- 1 T Worcestershire sauce
- salt and pepper to taste
Preparation
Step 1
For the glaze:
Add 3 T of the olive oil, onions and garlic to a medium-size saucepan and cook on high heat for 3 mins. Add apple juice and cook until 1 cup of liquid remains, about 15 mins. Add honey, dry oregano and dry rubbed sage. Continue to cook until glaze is syrupy-thick enough to coat the back of a spoon. Add the Dijon mustard, lemon juice, Worcestershire sauce, salt and pepper to taste. Remove from heat.
Preheat oven to 350F.
Place a large saute pan on stove top. On high heat, add 1 T olive oil and sear pork on all sides for about 5 mins. Place in oven and roast about 30-45 mins. or until internal temperature shows approx. 135F. Glaze pork 3-4 times during roasting process. Slice and serve.
