Kale with Pine Nuts and Shredded Parmesan

Ingredients

  • 1/4 cup pine nuts
  • 1/4 cup butter
  • 1 bunch kale, stems removed and leaves washed and roughly chopped (about 8 cups)
  • 1 t. white vinegar
  • salt and black pepper
  • 1/2 cup shredded parmesan cheese

Preparation

Step 1

Melt butter in a large skillet over medium heat. Add kale and cook until tender, 10 minutes. Add salt to taste while cooking (about 1/2 t.)

Toss cooked kale with vinegar and more salt, if needed, and pepper. Sprinkle with pine nuts and Parmesan cheese to serve.
