Ingredients
- 5 c cooked cubed and peeled potatoes
- 1-1/2 (12oz) sour cream
- 1-1/4 c shredded swiss cheese divided
- 1/2 c shredded carrot
- 1/4 c chopped onion
- 2 T minced fresh parsley
- 1 t salt
- 1/2 t dill weed
- 1/4 t pepper
- 1/4 t paprika
Preparation
Step 1
In a bowl combine the potatoes, sour cream, 1c swiss cheese, carrot, onion, parsley, salt, dill, and pepper. Transfer to a greased 8 inch square baking dish. Sprinkle with the paprika and remaining cheese. Bake uncovered at 350 degrees for 25-35 minutes or until bubbly.
