Mushroom Risotto

Ingredients

  • 3 cups chicken broth
  • 1/2 Tbsp. olive oil
  • 1 shallot or small onion
  • 1 clove garlic
  • 1 1/4 cups sliced mushrooms
  • dash of thyme
  • 3/4 cups arborio rice
  • 1/4 cup wine or water
  • 1/4 grated parmesan cheese
  • dash of black pepper

Preparation

Step 1

Heat oil in a large skilllet over meduim-high heat. Add; mushrooms, thyme, cook till mushrooms soften. Add; rice and cook till blended with mixture. Add 1 cup broth stirring until it is absorbed, the add the remainder broth and cook till rice is tender. Stir in Parmesan cheese and pepper and serve.
