Tuna Tartare

Ingredients

  • 1/2 lb sushi grade tuna diced
  • 2 tbls good olive oil
  • sea salt
  • ground white pepper
  • marinate above for min 2 hours
  • meanwhile
  • 1/2 small log goat cheese
  • 1 tsp mirin
  • 1 tsp light soy
  • 1/2 close garlic crushed
  • 1 tsp fresh grated ginger (or more to taste)
  • soften cheese and mix above together- taste and adjust - or you can adjust seasoning by adding a
  • bit of soy and mirin to the tuna after it is done marinating
  • mix cheese into tuna bit by bit with spatula until it looks/ tastes correct
  • serve with salt and vinegar potato chips or for less calories rice chips on a bed of watercress or
  • arugala
  • serve 4 as small app. or 2 for small entree
