Tuna Tartare

Ingredients
- 1/2 lb sushi grade tuna diced
- 2 tbls good olive oil
- sea salt
- ground white pepper
- marinate above for min 2 hours
- meanwhile
- 1/2 small log goat cheese
- 1 tsp mirin
- 1 tsp light soy
- 1/2 close garlic crushed
- 1 tsp fresh grated ginger (or more to taste)
- soften cheese and mix above together- taste and adjust - or you can adjust seasoning by adding a
- bit of soy and mirin to the tuna after it is done marinating
- mix cheese into tuna bit by bit with spatula until it looks/ tastes correct
- serve with salt and vinegar potato chips or for less calories rice chips on a bed of watercress or
- arugala
- serve 4 as small app. or 2 for small entree
