Ingredients
- 1 3 uncooked pasta
- 1 large lemon, its zest and juice
- 1/3 cup additional lemon juice
- 1/2 cup olive oil
- 3 medium tomatoes, chopped
- 1 bunch fresh basil (julienned)
- 1 cup Parmesan cheese, grated
- 2 tsp salt
- 2 tso black pepper
Preparation
Step 1
Cook pasta in a large pot of lightly salted water and drain. In a large bowl, toss lemon zest, lemon juice and olive oil while pasta is still warm. Then chill. Add tomatoes, basil, Parmesan cheese, salt and pepper to pasta. Toss gentky and thoroughly. Chill and serve.
