Pasta/Alfredo Sauce

Ingredients

  • 1 quart whipping cream
  • 1/2 # freshly grated Parmigiano Reggiano cheese
  • 2 tbsp butter
  • 3 egg yolks
  • Pinch of white pepper
  • Pinch of nutmeg

Preparation

Step 1

In the top of a double boiler, heat the cream over simmering water. When hot, add the cheese a little bit at a time, stirring until incorporated. Add the butter and remove from heat.

Stirring rapidly, slowly add the egg yolks to thicken the suace. season with pepper and nutmeg.
