BOW TIE GREEK PASTA SALAD

Ingredients

  • 1 package (500 g) bow tie pasta
  • 1/2 cup olive oil
  • 1/3 cup lemon juice
  • 1 tablespoon anchovy paste
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Pinch salt and pepper
  • 1 small cucumber, peeled if desired
  • 2 cups small cherry tomatoes
  • 1 cup small black olives, pitted
  • 1 cup chopped red onion
  • 1/2 cup chopped fresh parsley
  • 1 cup crumbled feta cheese

Preparation

Step 1

In a large pot of boiling, salted water, cook pasta for 8 to 10 minutes or until almost tender but firm; drain well.
Meanwhile, whisk together oil, lemon juice, anchovy paste, garlic, oregano, salt and pepper.
Toss half with pasta.
Let cool to room temperature, stirring occasionally.

Halve cucumber lengthwise and slice thinly crosswise.
Add to pasta with tomatoes, olives, onions, parsley and remaining dressing.
Toss to coat well.
Gently stir in feta cheese.
