Ingredients
- 2 cups penne
- 1 Tbsp. olive oil
- 2 large cloves garlic, minced
- 1 medium zucchini, sliced
- 1 medium onion, chopped
- 2 medium tomatoes, seeded and chopped
- 1/4 cup chopped parsley
- 1 tsp. dried basil
- 1 tsp. dried oregano
- 1/8 tsp. salt
- 1/4 tsp. pepper
- 1/4 cup Parmesan cheese
Preparation
Step 1
Cook pasta as directed. Drain and keep warm.
In a large skillet, heat oil over medium-high heat. Cook garlic for 15 seconds. Add zucchini and onion. Cook for 2-3 minutes.
Add tomatoes, parsley and seasonings. Heat for 1-2 minutes, stirring gently until heated through. Remove from heat and stir in pasta.
Sprinkle Parmesan over pasta; toss lightly and serve immediately.
