Roasted Potatoe Medley

Ingredients

  • 2 sweet potatoes
  • 4 yukon gold potatoes
  • 8 new potatoes
  • 1/4 C. plus 2 Tbsp. olive oil
  • 1 Tsp. dried tarragon
  • salt and pepper

Preparation

Step 1

Preheat oven 425. Peel and cube sweet potatoes and yukon potatoes. Scrub new potatoes and cube.

Place potatoes in large saucepan. Add enough lightly salted water to cover. Boil for 3 minutes. Drain.

Spread potatoes in single layer on a nonstick baking sheet.

Drizzle with olive oil and sprinkle with tarragon, salt, and pepper. Roast until browned and crisp. About 25 minutes. Serve immediately.
