- 1 POUND PASTA
- 1 CUP FONTINA CHEESE, DICES
- 1 CUP GORGONZOLA CHEESE, CRUMBLED
- 4 TABLE. PARMESAN CHEESE, GRATED
- 1/2 CUP RICOTTA CHEESE
- SALT & PEPPER TO TASTE
- 1/2 TEAS. DRIED RED CHILE FLAKES
- 1 TABLE. OLIVE OIL
- 4 TABLES. FRESH PARSLEY, MINCED
- 3 TABLES. TOASTED BREAD CRUMBS
Preparation
Step 1
COOK PASTA REMOVE ½ CUP PASTA WATER & SET ASIDE. DRAIN PASTA & RETURN TO COOKING POT WITH ½ PASTA WATER. STIR IN REMINING INGREDIENTS EXCEPT BREAD CRUMBS & COOK ON LOW UNTIL WATER MOSTLY EVAPORATES & CHEESE IS MEATED. REMOVE & TOP WITH BREAD CRUMBS
