Cucumber Yogurt Dip

English style gormet seedless cucumbers make this cooling dip easy to assemble. It's also simply delicious spooned over planked salmon.

Ingredients
- 2 gourmet mini seedless cucumbers
- 1 cup fat-free plain yogurt, drained
- 1 cup fat-free sour cream
- 1 tsp lemon juice
- 1 tsp chopped mixed herbs (parsley, dill, mint, basil, etc)
- Salt and pepper
Preparation
Step 1
Peel cucumbers and grate into mixing bowl. Add yogurt, sour cream, lemon juice and herbs and stir. Season to taste with salt and pepper. Refrigerate for 1 hour.
