Ingredients
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 1/2 lb lean ground beef or turkey
- 1-2 cloves garlic, minced
- 1 cup orange or white puree
- 1 cup marinara
- 1/2 cup lentil puree
- 1 cup chicken or vegetable broth
- 2 cups uncooked macaroni
- salt and pepper to taste
- grated parmesean
Preparation
Step 1
Heat the oil over medium heat in a deep skillet or earthenware pot. Add the onions and cook until they are slightly translucent, about 10 minutes; add the beef/turkey, stirring to break it up and cook until themeat is no longer red. Stir in the garlic, orange/white puree, marinara sauce, lentil puree, broth and macaroni.
Bring to a boil, then reduce heat to medium low, cover and simmer for 20-30 minutes or until pasta is tender.
SEason with salt and pepper and grated Parmesean.
