Ingredients
- For the salad:
- 4-5 cups shaved Brussels sprouts
- 1 T thinly sliced red onions
- 1/4 cup slivered or shaved almonds
- For the dressing:
- 1/2 cup lemon juice
- 2 T olive oil
- 2 tsp raw honey or maple syrup
- 1 T dijon mustard
- 1/2 tsp onion powder
- 1/2 tsp arrowroot powder
- pinch salt
Preparation
Step 1
To shave the Brussels sprouts, run them on a mandolin or shredder.
Add the shaved Brussels sprouts to a bowl with the rest of the salad ingredients.
Whisk all the ingredients for the dressing in a bowl.
Pour the dressing over the salad and place it in the fridge for 30 minutes so the flavors can marinate.
