Ingredients
- 3 eggs, beaten
- 1 c. medium unsweetened coconut
- 1 c. sugar
- 3 1/2 oz. pkg. slivered almonds
- 1/4 c. flour
- 1/2 c. milk
- 1 tsp. almond extract
- 24 unbaked tart shells
Preparation
Step 1
Preheat oven to 350 degrees.
In a medium bowl, beat eggs and add all remaining ingredients.
Place about 2 tbsp. of filling in each shell or fill shells 3/4 full.
Bake for 25 to 30 minutes, or until golden brown.
Variation:
For added flavor, place 1 tsp. of raspberry jam at the bottom of each tart shell before spooning in the coconut filling.
