Chicken Pesto Penne & Tomato Mozzarella Baguette

Ingredients

  • 1 lb penne pasta noodles
  • 3 boneless skinless chicken breasts cut into
  • bite sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons garlic - minced
  • 8 ounces prepared basil pesto
  • Salt and pepper - to taste
  • 1 loaf baguette bread - sliced
  • Olive oil
  • 2 tomatoes - sliced very thin
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon dried basil

Preparation

Step 1

1) Cook pasta according to directions on package.
2) In a medium skillet, saute chicken and garlic in the olive oil. Add pesto to cooked chicken and cook
on low for 15 minutes.
3) Add cooked pasta to skillet. Mix well and serve.
Baguette:
1) Place slices of baguette bread flat on a large baking dish. Drizzle lightly with olive oil. Place under
high broil (on highest rack) for 30 seconds to 1 minute - until golden brown.
2) Remove from oven and top with tomato, mozzarella, and basil. Place back under broiler for another
30 seconds to 1 minute - until cheese is melted.
