APPLESAUCE CAKE

Ingredients

  • 2 1/2 cups all purpose flour
  • 2 cups sugar
  • 1/4 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 3/4 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp allspice
  • 1/2 cup soft shortening
  • 1/2 cup water
  • 1 1/2 cups unsweetened applesauce
  • 2 eggs
  • 1/2 to 1 cup chopped walnuts
  • 1 cup raisins, chopped

Preparation

Step 1

Heat oven to 350 degrees. Grease and flour two 9 inch layer pans or an oblong pan 13 x 9 1/2. Blend dry ingredients in bowl. Add shortening, water and applesauce. Beat 2 minutes on medium speed, scraping sides and bottom of bowl. Add eggs. Beat 2 more minutes. Stir in walnuts and raisins. Pour into pan(s). Bake layers for 35 to 40 minutes, oblong 45-50 minutes. Cool. Frost with Cream Cheese Icing.

Cream Cheese Icing
1 8 ounce pkg cream cheese, softened
1/2 cup butter, softened
1 lb powdered sugar
1 tsp vanilla

Mix ingredients until light and fluffy. Swirl on top of cooled cake. Sprinkle with additional chopped walnuts.
