Zucchini Pie

Ingredients

  • 8 C Zucchini, sliced 1/4 inch
  • 1 1/4 C Sugar
  • 2 T Flour
  • 1 1/2 tsp Cinnamon
  • 1 1/2 tsp Cream of Tartar
  • Dash of Salt
  • Dash of Nutmeg
  • 2 T Lemon Juice
  • 2 9 in Pie Crusts

Preparation

Step 1

Peel and seed zucchini, cut into slices. Cook until tender. Drain, run cold water over zucchini. Drain well. Mix all ingredients together then add to the zucchini. Pour into pie shells. Dot with butter and bake at 400 for about 50 minutes or until crust browns.
