Lemony Roast Chicken with carrots and shallots.

Ingredients

  • 500 g carrots, cut into sticks
  • 75 g black olives
  • 8 shallots (spring onions) peeled
  • 2 Tbspn olive oil
  • 8 chicken drumsticks
  • Grated zest and juice of 1 lemon
  • 2 cloves garlic
  • 20 g parsley, chopped
  • salt and pepper

Preparation

Step 1

Pre-heat oven to 200C.

Place Carrots, shallots and olives in a large roasting tin, drizzle with 1 Tbspn olive oil and season, stir well.
Sit drumsticks over veg, drizzle with lemon juice and remaining oil.
Cook in the middle f oven for 30-35 min, until cooked through.
Combine lemon zest, garlic and parsley, scatter over chicken before serving.
