Ingredients

  • 2 cups coffee rich
  • 3 eggs
  • 1 1/2 sticks melted butter
  • 1/2 cup sugar
  • 1/2 cup flour
  • cinnamon
  • 1 pkg frozen butternut squash

Preparation

Step 1

Defrost squash and coffee rich overnight.
Mix in squash, butter, sugar, flour, and cinnamon.
In another bowl, beat 3 eggs with a fork, 2 cups coffee rich, add squash and pour into greased casserole dish and bake 350 for at least one hour.
I usually double or triple it for holiday company.
