Ingredients
- 2 large artichokes
- 1 cup italian bread crumbs
- 2 tsp oregano
- 1/4 tsp fresh pepper
- 1/2 tsp salt
- 2 anchovies chopped
- 1 tbsp capers chopped
- 2 large cloves garlic sliced
- 1 cup and 2 tbsp olive oil
- 1/4 cup grated parmesan
- 2 tbsp melted butter
Preparation
Step 1
Slice bottom and stem off. Very top of leaves cut off. Place artichoke in deep pot and cover with water. Add drop olive oil to water and par boil for 1 hour.
Mix: Crumbs, oregano, pepper, salt, anchovies, butter, capers and garlic. Moisten mixture with 1/4-1/2 cup olive oil. When artichokes cooked turn upside to drain. Spread leaves, open and pull out fuzzy choke center. Spread mixture thryu and top with drops of olive oil. Place in pan, pour 1/4 cup olive oil into pan bottom. Broil for few minutes until brown on top.
