Ingredients
- chopped Onions
- olive oil
- 2/3 C peeled and chopped pumpkin
- 3 C veg. stock
- 1 C cold water
- vegetarian mini ravioli pasta
- 1/4 C cream
- Fresh chopped chives
Preparation
Step 1
Saute chopped onions in olive oil - 3 minutes. Add 3/4C. peeled and chopped pumpkin, 3C veg stock and 1C cold water. Bring to a boil, reduce heat to med-low. Simmer partially covered for 15-20 minutes or until pumpkin is tender. Remove lid, set aside for 5 min to cool slightly.
Blend pumpkin mixture until smooth, return to heat and bring to a simmer. Add Vegetarian mini ravioli pasta, 1/4C cream, and fresh chopped chives.
