Ingredients
- 4 Med. Red Potatoes, unpeeled & quartered
- Pinch of Salt
- 2 Tbsp. Butter
- 1/3 C. Light Sour Cream
- 1/4 C. Fresh Chives, chopped
Preparation
Step 1
Place potatoes in a med. saucepan. Cover with water, add salt & bring to a boil. Cook, uncovered, for about 15 min. or till soft; drain well. Return potatoes to the pan. Mash till no large lumps remain. Add butter, sour cream & chives. Stir with a fork till smooth. Serve.
