Ingredients
- 3 tomatoes, peeled, seeded and diced
- 1/2 cup basil leaves, roughly chopped
- 1 cup arugula leaves
- 2 bunches scallions, cut on the bias into 1/2 inch rounds
- 1/2 rigatoni
- 1/3 cup extra virgin olive oil
- 1/2 cup oil cured black olives (optional)
- 12 cherry tomato halves
- 3 tbsp shaved fresh parmesan, not grated shaved can add more
Preparation
Step 1
In large salad bowl, toss together tomatoes, basil, arugula, scallions, and warm rigatoni. Toss in olive oil and olives. Just before serving garnish with cherry tomatoes and shaved parmesan. Season with salt and pepper.
