Orzo Salad (Leslie Saraken)

Ingredients

  • 1 Red Pepper
  • 1/2 cup Dill
  • 1 1/2 tbsp Dijon
  • 3/4 Cup Mayo
  • 1 1/2 lb Shrimp
  • 3/4 tsp Salt
  • 1/2 tsp Pepper
  • 12 oz Orzo
  • 1 tbsp White Wine
  • 5 Scallions

Preparation

Step 1

Roast pepper in 1 tbsp oil, slat and pepper, for 20 minutes.
Cook orzo 12 minutes, Add shrimp, cup up pepper, and add rest.
Serve cold.
