Lentil and Cauliflower Tacos

Ingredients

  • 1 cu lentils
  • 1 head cauliflower cored and broken into florets
  • 2 tbs olive oil
  • 2 med yellow onions diced about 1 1/2 cu
  • 1 jalapeno seeded and minced
  • 4 cloves garlic
  • 4 tea chili powder
  • 2 tea cumin
  • 1 tea coriander
  • 1/2 cup tomato sauce
  • 1/2 tea pepper

Preparation

Step 1

Taco filling: rinse the lentils and drain well. Combine lentils with 3 cu water in saucepan. Bring to boil, then reduce heat to low and simmer until tender about 30 min. Drain excess water, set aside. Pause the cauliflower in food processor until reduced to pieces the size of rice. Heat oil in skillet over med heat. Add onions and jalpino cook until onions are translucent 5-7 min. Add cauliflower garlic, chili powder, cumin, coriander cook 4 min. Stir in tomato sauce cook till cauliflower is tender. Add lentils and pepper cook 3 min. Serve in taco shells
