Ingredients
- 3 lbs baby red potatoes, halved
- 2 tbs olive oil
- 1 tbs herbs de provence
- 1/2 tsp each salt and pepper
Preparation
Step 1
Preheat oven to 375F.
In a large bowl toss potatoes with oil, herbs, salt and pepper to coat.
Spread potatoes in single layer in shallow roasting pan.
Bake until tender and browned, about 1 hr and 20 min.
