    lbs baby red potatoes, halved

  • 2

    tbs olive oil

  • 1

    tbs herbs de provence

  • 1/2

    tsp each salt and pepper

Directions

Preheat oven to 375F. In a large bowl toss potatoes with oil, herbs, salt and pepper to coat. Spread potatoes in single layer in shallow roasting pan. Bake until tender and browned, about 1 hr and 20 min.
