Ingredients
- 2 acorn squash (approximately 1 pound each), halved, seeds removed
- 2/3 cup butter-cracker crumbs
- 1/3 cup chopped pecans
- 1/3 cup butter, melted
- 3 tablespoons brown sugar, packed
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon or nutmeg
- Preparation
- Place prepared squash halves cut side down in a 12 x 8 x 2-inch oblong microwave-safe or equivalent dish, and cover with wax paper.
- Microwave on high for 6 minutes.
- During this time, mix the remaining ingredients.
- Turn squash halves cut side up and fill with pecan / cracker mixture.
- Re-cover with wax paper and microwave on high for 6 to 8 more minutes.
- Remove wax paper and let stand 5 minutes before serving.
