Ingredients

  • 2 acorn squash (approximately 1 pound each), halved, seeds removed
  • 2/3 cup butter-cracker crumbs
  • 1/3 cup chopped pecans
  • 1/3 cup butter, melted
  • 3 tablespoons brown sugar, packed
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon or nutmeg
  • Preparation
  • Place prepared squash halves cut side down in a 12 x 8 x 2-inch oblong microwave-safe or equivalent dish, and cover with wax paper.
  • Microwave on high for 6 minutes.
  • During this time, mix the remaining ingredients.
  • Turn squash halves cut side up and fill with pecan / cracker mixture.
  • Re-cover with wax paper and microwave on high for 6 to 8 more minutes.
  • Remove wax paper and let stand 5 minutes before serving.
