Avocado Dressing

Ingredients

  • 3/4 c buttermilk
  • 3 ounces pitted very ripe avocado, pared and chopped
  • 1/3 c reduced-calorie mayonnaise
  • 1/4 c sour cream
  • 1 T lemon juice
  • 1 garlic clove, minced
  • 1/4 t salt
  • 1/8 t white pepper

Preparation

Step 1

In blender container or work bowl of food processor combine all ingredients and process until smooth, scraping down sides of container as necessary. Transfer to bowl or jar with tight-fitting cover; cover and refrigerate until flavors blend, about 30 minutes. Just before serving, stir well.

Keeps in refrigerator for about 1 week.
