Chilli Plum Chicken Cakes

Ingredients

  • 500 g chicken mince
  • 1 small red chilli, seeded and chopped
  • 2 cloves of garlic, crushed
  • a handful of fresh corriander, chopped
  • 30 ml oyster sauce
  • 15 ml fish sauce
  • 125 ml coconut milk
  • Salt and pepper to taste
  • 4 spring onions, finely chopped

Preparation

Step 1

1. Preheat oven to 200 celcius
2. In a bowl combine chicken, chilli, garlic, corriander, oyster sauce, fish sauce, coconut milk, salt and pepper and spring onions.
3. Divide the mixture equally into the cups of a well greased 12 cup muffin pan.
4. Bake for 15 to 18 minutes or until cooked through.
5. Serve with sweet chilli dipping sauce.
