Soft Shell Crabs (Carolyn Davis)

Ingredients

  • Soft shell crabs
  • Oregano
  • Parmesan
  • Chicken Broth
  • Vermouth and white wine
  • Lemon
  • Fresh garlic

Preparation

Step 1

Reclean them. Egg Wash, then flour and bread crumbs, oregano, parmesan. In a very hot pan, sear it quick, few minutes on each side. Not virgin olive oil, just regular. In that pan, take the flame down and add chicken broth, vermouth, and white wine, fresh lemon, fresh garlic and simmer.
Serve as a first course with delicious bread.
