Pan-Fried Veal chops with Lemon & Rosemary

Ingredients

  • 6 veal rib chops, 1"thick
  • 2 T olive oil
  • 1 T finely chopped rosemary
  • 1/4 t ppepper
  • 4 T butter
  • Salt
  • 2 T lemon juice
  • 2 T water

Preparation

Step 1

Rub veal chops all over with olive oil, chopped rosemary & blcak pepper. Let stand at room temp. for 10 min.
In large skillet, cook butter over mod-hi heat til it start to brown, @ 1 min. Season chops with salt. Add to skillet & pan-fry over mod-hi heat, turning occasionally, til golden & instant-read thermometer registers 125, @15 min. Transfer to serving platter
Add lemon juice & water to skillet & cook 1 min., scraping up any browned bits from bottom. Pour pan sauce over chops & serve at once.
