Zucchini Bread

Ingredients

  • 3 eggs
  • 2 c sugar
  • 1 c vegetable oil
  • 3 T vanilla
  • 2 c grated zucchini with skin
  • 3 c flour
  • 1 t salt
  • 1 t baking soda
  • 1/4 t baking powder
  • 3 t cinnamon
  • 1 c nuts or raisins

Preparation

Step 1

Beat eggs until light and fluffy. Add sugar, oil and vanilla. Add zucchini. Combine and add to mixture flour, salt, baking soda, baking powders and cinnamon. Add nuts or raisins.
Grease and flour tins. Bake 350 for one hour (2 large loaves). Let cool 15 mins in pans before removing.
