This makes an easy, light meal. Serve with crusty bread.

Ingredients

  • Romaine lettuce
  • Cherry tomatoes, halved
  • Avocado, chopped
  • Fresh mozzarella, chopped
  • Chicken breasts, chopped (use leftover chicken breast from earlier meal)
  • Fresh torn basil
  • Balsamic reduction (1 cup of balsamic, simmer until reduced to a thin syrup. Cool)

Preparation

Step 1

Top plates with lettuce
sprinkle tomatos over
top with chopped avocado
top with mozzarella
top w chicken breast
top w basil
drizzle with balsamic reduction
