Wild Rice with Mushrooms and Almonds

Ingredients

  • 1 cup uncooked wild rice
  • 1/4 cup butter
  • 1/2 cup slivered almonds
  • 2 tbs snipped chives or chopped green onions
  • 1 can mushroom stems and pieces, drained
  • 3 cups canned chicken broth or use 3 chicken bouillon cubes in 3 cups boiling water.

Preparation

Step 1

Preheat oven to 325F.
Wash and drain rice.
Melt butter in a large skillet.
Add rice, almonds, chives and mushrooms; cook and stir until almonds are golden brown, about 20 minutes.
Pour rice mix into an ungreased 1 1/2 quart casserole.
Heat chicken broth to boiling; stir in rice mix.Cover tightly; bake 1 1/2 hours or until all liquid is absorbed and rice is tender and fluffy.
